Ingredients
  • 1 c sugar
  • 1/2 c shortening
  • 1 egg, beaten
  • 1 tsp lemon extract
  • 1/2 c raisins
  • 1/2 c raw carrots, finely grated
  • 2 c flour
  • 2 tsp baking powder
  • 1/2 tbsp salt

Directions
  1. Cream sugar with shortening. Beat in egg and lemon extract. Stir in carrots and raisins, then sifted dry ingredients. Drop by spoonfuls on greased baking sheet. Bake at 400 degrees for 10-12 minutes. Makes 3 dozen.
  2. Variation: You may substitute one cup of honey for the sugar. It changes the texture of the cookie, making it more cake-like, but it is still delicious!

I can taste them now. Thanks for a great cookie recipe Gardenladyz! I've never made carrot cookies in my life and I'm looking forward to making these for the grandsons.


Since we love carrot cake, I can't imagine that these wouldn't be a sure winner, too - they sound easy and moist and delicious. Thank you for a nice "change of pace" cookie recipe to try!
