Carrot Cookies

I have been making these cookies since I was a kid! These cookies are very unique. Even though they have carrots in them, the carrots do not give them the flavor you would expect. Ingredients
- 1 c sugar shopping list
- 1/2 c shortening shopping list
- 1 egg, beaten shopping list
- 1 tsp lemon extract shopping list
- 1/2 c raisins shopping list
- 1/2 c raw carrots, finely grated shopping list
- 2 c flour shopping list
- 2 tsp baking powder shopping list
- 1/2 tbsp salt shopping list
How to make it
- Cream sugar with shortening. Beat in egg and lemon extract. Stir in carrots and raisins, then sifted dry ingredients. Drop by spoonfuls on greased baking sheet. Bake at 400 degrees for 10-12 minutes. Makes 3 dozen.
- Variation: You may substitute one cup of honey for the sugar. It changes the texture of the cookie, making it more cake-like, but it is still delicious!
