Honey Chili Chicken Recipe
This is probably my favorite recipe. Its exactly what it sounds like, chicken coated in chili pepper and honey with a touch of lime juice. You can cook it in the oven or on the grill. Minced garlic works well for a variation.

Ingredients
  • 6 Chicken drumsticks (You can use thighs too or sub hot wings)
  • 2 Tbs Chili powder (use your favorite kind, whatever heat level you like. I usually use 1/2 ancho and 1/2 regular chili powder. For a good kick sub cayenne for one half.)
  • 1 Tbs Honey
  • 1 Tbs Fresh lime juice (I like key limes)
  • 1 ts Kosher salt
  • Freshly ground black pepper

Directions
  1. Put oven rack in upper third of oven and preheat to 425°F.
  2. Use 10 by 15 inch shallow baking pan lined with foil and an oiled up-metal rack.
  3. Mix everything except chicken in a mixing bowl well using a fork.
  4. Add chicken to bowl and mix.
  5. Arrange chicken in a single layer on the rack.
  6. Bake, uncovered, for 30 to 35 minuets turning once.

This recipe is so easy and really needs no measuring. You can eyeball it but bee careful not to make it too spicy!!!
