Chimichangas Recipe
This is a good dish to have for a comforting night, I love the taste of the fried tortilla with the meat fillings. The filling can easily be changed to shredded pork or chicken.

Ingredients
  • 1 # ground beef
  • ½ # chorizo, casings removed
  • 1 medium onion, chopped
  • ¼ cup fresh cilantro, chopped
  • 1 (4oz) can diced green chilies
  • 1 cup cheddar cheese, shredded
  • 12 flour tortillas
  • Vegetable oil
  • Salsa and sour cream, for topping

Directions
  1. In a large skillet, cook the beef, chorizo, and onion until cooked; stirring frequently to break up the meat and to blend well. Drain off any excess fat.
  2. Stir in the cilantro, chilies, cheese. Mix well.
  3. Place approx. ¾ cup of meat mixture near the center of the tortilla. Fold in the 4 sides, envelope style; secure with a wooden pick.
  4. Pour oil into the skillet to a depth of 3/4-inch, heat oil to 370. Fry 3-4 chimichangas at a time until both sides are golden brown, turning once.
  5. Drain onto paper towels.
  6. Top with salsa and sour cream.

Yummmmmmmy! We also top with a mole sauce.. cheese.. and then the salsa and sour cream.. Talk about bad for ya! But sooooooooooooo good!
