Tempura Asparagus Salad With Citrus Ginger Vinaigrette

- Your favorite mixed greens. shopping list
- 1 bunch baby asparagus stalks shopping list
- Tempura batter (see below) shopping list
- mandarin oranges shopping list
- cucumber shopping list
- honey glazed walnuts shopping list

- 1 large egg shopping list
- 1 cup flour shopping list
- 1 cup ice water shopping list
- Dressing: shopping list
- white balsamic vinegar (if you don't have white balsamic, you can substitute with rice vinegar. Using regular dark-colored balsamic vinegar will ruin the color of the dressing). shopping list
- olive oil shopping list
- sesame oil shopping list
- salt and pepper shopping list
- Fresh lemon juice shopping list
- honey shopping list
- mandarin orange shopping list
- ginger shopping list
How to make it
- First make the dressing. Mix all below ingredients into blender.
- A few drops of sesame oil (do not overdo the sesame oil)
- Juice of 1/2 lemon
- 1 TBLspoon honey
- Pinch of salt
- 1 TEAspoon of minced and peeled ginger
- Juice of 1 mandarin orange
- Add olive oil and vinegar to taste
- Blend until all is purified. Leave in blender.
- *If you don't like honey or are allergic, substitute sugar. Remember to go sparingly if you use white processed sugar.
- Make the honey glazed walnuts:
- In a saute pan on medium heat, add walnuts.
- Heat for 1-3 minutes, do NOT burn.
- Add a small amount of honey (just enough to barely coat nuts), stir quickly, and remove from pan to cool.
- Make the tempura asparagus:
- Mix flour, egg, and ice water quickly into a bowl.
- Dip asparagus and immediately put into hot peanut oil heated
- to 375 degrees.
- Fry until golden brown.
- Toss salad greens with desired amount of dressing, peeled cucumber slices, mandarin orange slices, and honeyed walnuts.
- Top with tempura asparagus.

You are so right....This would go great with the grilled chicken with pineapple sauce....I am always looking for new ways to do asparagus as I have just tried it in the last year or so and love it....I know, what took me so long? Got my 5..:)
