Ingredients

How to make it

  • First make the dressing. Mix all below ingredients into blender.
  • A few drops of sesame oil (do not overdo the sesame oil)
  • Juice of 1/2 lemon
  • 1 TBLspoon honey
  • Pinch of salt
  • 1 TEAspoon of minced and peeled ginger
  • Juice of 1 mandarin orange
  • Add olive oil and vinegar to taste
  • Blend until all is purified. Leave in blender.
  • *If you don't like honey or are allergic, substitute sugar. Remember to go sparingly if you use white processed sugar.
  • Make the honey glazed walnuts:
  • In a saute pan on medium heat, add walnuts.
  • Heat for 1-3 minutes, do NOT burn.
  • Add a small amount of honey (just enough to barely coat nuts), stir quickly, and remove from pan to cool.
  • Make the tempura asparagus:
  • Mix flour, egg, and ice water quickly into a bowl.
  • Dip asparagus and immediately put into hot peanut oil heated
  • to 375 degrees.
  • Fry until golden brown.
  • Toss salad greens with desired amount of dressing, peeled cucumber slices, mandarin orange slices, and honeyed walnuts.
  • Top with tempura asparagus.

    You are so right....This would go great with the grilled chicken with pineapple sauce....I am always looking for new ways to do asparagus as I have just tried it in the last year or so and love it....I know, what took me so long? Got my 5..:)
