Macadamia Apricot Chicken Recipe
The chicken dish we like in the summer with steamed broccoli and a nice chardonay.

Ingredients
  • 6 boneless chicken breasts
  • 1/2 cup ground macadamia nuts ( jar ) roasted
  • 1/4 cup fresh ground parmesan cheese
  • 1 cup plain fine ground bread crumbs
  • 1/4 cup melted butter ( real stuff )
  • 1/2 cup apricot jelly

Directions
  1. wash and dry chicken breasts
  2. combine nuts cheese bread crumbs in bowl
  3. whisk melted butter and jelly in stove top pan ( reserve some for brushing) pour in bowl.
  4. dip chicken in jelly & butter and dredge through crumb mixture.
  5. place on baking pan . bake for 40 to 45 min. in 350 degree preheated oven . brush with jelly & butter once or twice . be careful not to remove crust from breasts. when golden brown serve quickly

Oh yum - we will have to try this one. We eat chicken probably 5 times a week, so I am always looking for a new, tasty way to prepare it. This looks easy AND delicious...thanks for the recipe!
