How to make it

  • Peal cucumbers and cut them in half length wire and remove seeds. Slice the halves into thin crescents.
  • Lay on paper towels and sprinkle with salt.
  • Refrigerate uncovered for 30-60 minutes.
  • Remove cucumbers from fridge, pat dry.
  • In a bowl, combine yogurt, oil, vinegar, salt, pepper and mint. Blend throughly.
  • Then toss in the cucumbers. Let sit in the fridge, covered until ready to serve.

    I love cucumber salad but haven't tried it this way. I have cucumbers in our garden so I will try this one for our cookout on Saturday.
