Cucumber Salad

- 2 cucumbers shopping list
- 1/2 tsp. salt shopping list
- 1 cup plain low fat yogurt shopping list
- 1 tbs. extra virgin olive oil shopping list
- 2 tsp white wine vinegar shopping list
- salt and pepper to taste shopping list
- 2 tsp. chopped fresh mint leaves shopping list
How to make it
- Peal cucumbers and cut them in half length wire and remove seeds. Slice the halves into thin crescents.
- Lay on paper towels and sprinkle with salt.
- Refrigerate uncovered for 30-60 minutes.
- Remove cucumbers from fridge, pat dry.
- In a bowl, combine yogurt, oil, vinegar, salt, pepper and mint. Blend throughly.
- Then toss in the cucumbers. Let sit in the fridge, covered until ready to serve.

I love cucumber salad but haven't tried it this way. I have cucumbers in our garden so I will try this one for our cookout on Saturday.
