How to make it

  • Cut each breast into 4 pieces lengthwise. Pound till thin and flat with mallet. Briskly whisk the egg with the water in a wide shallow bowl. In a second wide shallow bowl,or a plate with a rim,mix the breadcrumbs with basil and oregano. Heat half of the oil in large skillet over med-low. When hot dip half the chicken pieces in egg and then breadcrumbs,coating chicken evenly.
  • Add garlic to skillet and cook 30 seconds.(do not brown). Add the chicken pieces. Brown lightly,turn chicke and brown lightly on the other side,1-2 mins per side.Remove from pan and repeat with remaining chicken,adding remaining oil if needed.Add white wine to pan and stir to loosen all the yummy brown bits. Add the lemon juice. Return all chicken to pan and cook,covered,over low heat for about 10 mins or till done. If there is not enough sauce in the pan ,add more wine. If there is too much,remove the cover aand let reduce a bit. Remove from pan and serve
