Superfast Blueberry Cobbler Recipe
The buttery crust begins as a batter on the bottom and as it bakes, rises to the top. This is a summer favorite of mine. I love bueberries but I'm sure a combination would be great.

Ingredients
  • 1/2 cup (1 stick) butter
  • 1 cup flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup sugar
  • 3/4 cup milk
  • 2 cup fresh blueberries (or 12 oz frozen)
  • 1/2 cup sugar
  • 1/2 cup water

Directions
  1. Preheat oven to 350 degrees.
  2. Melt butter in a shallow 1 1/2 qt. baking dish.
  3. In mixing bowl, combine flour, baking powder, salt, sugar and milk; pour evenly over butter.
  4. Combine berries, sugar and water; spoon evenly over flour mixture.
  5. DO NOT STIR.
  6. Bake 40 to 45 minutes.

Our blueberry bushes are producing excellent large berries this year. I made this recipe over the weekend and it was delicious! My husband and I ate it all in just a couple days.
