How to make it

  • Line 1qt glass dish or loaf pan with plastic wrap.
  • Mix cheeses, garlic and dill until well combined.
  • Slowly add oil until blended.
  • Add chives and mix until just combined.
  • Spread 1/3 of cheese mixture in bottom of lined bowl/pan.
  • Cover that layer with pesto, then 1/2 of remaining cheese mixture.
  • Top that layer with peppers, then rest of cheese mixture.
  • Cover tightly with another layer of plastic wrap and chill well.(at least 3 hours)
  • *For serving, unmold cheese, remove plastic, and carefully smooth sides and "top"(was the bottom) for a better presentation. Serve with sesame or wheat crackers or toasted French bread slices*
  • ***for another variation, you can completely drain and finely chop a jar of green olives to replace the pesto and/or the roasted red pepper can be replaced with sun dried tomatoes in oil***
