Mustard Crusted Salmon

- 4-6 salmon fillets shopping list
- salt and pepper to taste shopping list
- 1/4 cup sour cream or plain yogurt or mayonnaise (feel free to use the low-fat varieties) shopping list
- 2 T mustard (a Dijon or stone ground variety works best here) shopping list
- 1-2 t lemon juice shopping list
- Dried dill or tarragon to taste (optional) shopping list
How to make it
- If you're cooking inside, preheat the broiler.
- Place salmon, skin side down in a pan.
- Season to your taste with salt and pepper
- Combine the sour cream (or yogurt or mayonnaise), mustard, lemon juice , and dill or tarragon (if you're using it) in a small bowl.
- Coat the salmon with the sour cream-mustard mixture and broil until cooked through and the crust has begun to brown -- about 10 - 12 minutes.
- If you're grilling, cook the salmon until almost done, coat with the mustard mix and allow to brown.
