Mustard Crusted Salmon Recipe
Quick, delicious, and good for us! This can be broiled in the oven or grilled on the barbecue.

Ingredients
  • 4-6 salmon fillets
  • Salt and pepper to taste
  • 1/4 cup sour cream or plain yogurt or mayonnaise (feel free to use the low-fat varieties)
  • 2 T mustard (a Dijon or stone ground variety works best here)
  • 1-2 t lemon juice
  • Dried dill or tarragon to taste (optional)

Directions
  1. If you're cooking inside, preheat the broiler.
  2. Place salmon, skin side down in a pan.
  3. Season to your taste with salt and pepper
  4. Combine the sour cream (or yogurt or mayonnaise), mustard, lemon juice , and dill or tarragon (if you're using it) in a small bowl.
  5. Coat the salmon with the sour cream-mustard mixture and broil until cooked through and the crust has begun to brown -- about 10 - 12 minutes.
  6. If you're grilling, cook the salmon until almost done, coat with the mustard mix and allow to brown.
