Ingredients
  • 4 yellow crookneck squash, sliced 1/4-inch thick
  • 4 medium tomatoes, sliced 1/4-inch thick
  • 2 green onions, minced
  • 4 Tbsp. olive oil
  • 2 Tbsp. wine vinegar
  • 1 Tbsp. Dijon-style mustard
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper

Directions
  1. Preheat oven to 400.F
  2. In a lightly oiled 1-quart shallow baking dish, alternate squash and
  3. tomato slices. (Choose squash and tomatoes that will be about the same size when sliced.) Sprinkle with green onions.
  4. Combine oil, vinegar, mustard, salt and black pepper. Drizzle over
  5. vegetables.
  6. Bake at 400°F for 10 to 15 min. Let cool 10 to 15 min. before serving;
  7. the flavor will be superior.

Wow, I've never done something like this but I know I'd love it. I bet that feta cheese sprinkled over the top when its finished would give it even extra bite. Yum .. I'm hungrey now

Hello this sounds great. I have lots of crookneck squash so Id like to try this. However, what does "X-inch thick" mean in your preparation. My guess is that its up to the cook for thickness but I wanted to be sure that wasn't anything specific. Thanks!
