Fudged-It-Not Cake

- 1-1/2 cup Brown sugar; packed shopping list
- 1-1/4 cup Flour; all purpose shopping list
- 1/2 cup Cocoa powder; unsweetened, sifted shopping list
- 1-1/2 teaspoon baking soda shopping list
- 3/4 teaspoon baking powder shopping list
- 1 pinch cinnamon shopping list
- 1 pinch salt shopping list
- 1 egg shopping list
- 1 egg white shopping list
- 3/4 cup buttermilk shopping list
- 3/4 cup Coffee; strong shopping list
- 1/3 cup Oil; vegetable shopping list
- icing shopping list
- 1/4 cup Cocoa powder; unsweetened, sifted shopping list
- 4 teaspoons Sugar; granulated shopping list
- 4 teaspoons cornstarch shopping list
- 1/2 cup Milk; skim shopping list
- 1/4 cup corn syrup shopping list
- 1 teaspoon vanilla shopping list
- Optional toppings: coconut, chopped nuts, grated chocolate and or some whipped cream. shopping list
How to make it
- In bowl, combine brown sugar, flour, cocoa, baking soda and baking powder, cinnamon and salt.
- In separate bowl, beat together egg and egg white.
- Beat in the buttermilk, coffee and oil.
- Make a well in sugar mixture and pour coffee mixture into well and whisk just till blended.
- Pour into greased 8-inch square cake pans.
- Bake in your oven for 30 to 40 minutes.
- Test with a toothpick to see if the wood is clean and then its done!
- The cake should spring back when you press down on it.
- Let cool in pan on rack for 20 minutes.
- Icing:
- In small saucepan, combine cocoa, sugar and cornstarch.
- Whisk in milk until blended, then corn syrup and vanilla.
- Bring to boil over medium-high heat, whisking constantly, reduce heat to low and cook, whisking for 1 to 2 minutes or till thickened and glossy.
- Let cool for 5 minutes.
- Spread evenly over cake.
