I also got this one from my Family Circle. It's simple, easy and tastes great!

Ingredients
  • 1/4 cup slivered almonds
  • 1 Tbsp. canola oil
  • 1 lb. large shrimp, shelled and deveined
  • 1 cup snow peas, sliced
  • 1 Tbsp. garlic, minced
  • 1 Tbsp. ginger
  • 1 green onion, sliced or chopped
  • for garnish....almonds and green onion

Directions
  1. In a 400F oven, toast 1/4 slivered almonds for 2 minutes.
  2. In a large skillet, heat 1 Tbsp. canola oil.
  3. Add 1 lb. shrimp and saute.
  4. When shrimp are nearly opaque, add 1 cup sliced snow peas and 1 Tbsp. each, minced garlic and ginger.
  5. Remove from heat when shrimp are white.
  6. Toss with almonds and 1 sliced green onion.
