How to make it

  • Roll out a sheet of puff pastry to slightly larger than the rimmed baking sheet you use. Fit it into the baking sheet, dock the pastry all over with fork . Repeat with second puff pastry sheet and bake both according to directions. Remove from oven and cool COMPLETELY.
  • Meanwhile, gently fold the Cool Whip into the pudding. Spread pudding mixture over top of each crust. Evenly distribute blueberries in a single layer over one filled crust; evenly distribute strawberries, cut side down, over second filled crust.
  • Melt apple jelly in a small saucepan until just melted. Drizzle half of the melted jelly over one tart, gently spreading with a pastry brush to cover all the berries; repeat for the second tart. Refrigerate until serving time.
  • To serve: scatter piped stars of Cool Whip or freshly whipped cream across each of the tarts. Cut into nice large square and alternate pieces of each on a platter to serve.
  • NOTE: Instead of the puff pastry, you can use refrigerated sugar cookie dough. Just as good!
