Smoked Jalapeno Poppers Recipe
A version of an appetizer I saw on Diners Drive Ins and Dives

Ingredients
  • 1 Large Bell Pepper - Chopped
  • 1 Red Pepper - Chopped
  • 1 Cup Soy Sauce
  • 2 cups Dark Brown Sugar
  • 1 dozen Jalapeno Peppers
  • 1-8 oz package of softened Cream Cheese
  • 1 package of thinly sliced bacon
  • 1 Tsp Paprika
  • 1/4 Tsp Cayenne
  • 1 Tsp Pepper
  • 1/2 Tsp Salt

Directions
  1. Set the Heat on the Smoker to equate to about 250 degrees
  2. Marinade the Chopped Red and Green Peppers in the mixture of Soy and Brown Sugar for 2 hours.
  3. Cut the stems off of the Jalapenos, slice in 1/2 and seed the peppers.
  4. Mix the softened Cream Cheese and the drained, marinated sweet peppers in a freezer bag and cut a 1/2" portion from the bottom corner of the bag to use as a pastry bag.
  5. Fill the Jalapeno halves with the cream cheese mixture and put the halves back together.
  6. Wrap a 1/2 slice of bacon around the Jalapeno and insert a toothpick into to hold together
  7. Mix your Dry Seasonings together and sprinkle lightly onto the Poppers.
  8. Smoke until the Bacon is done (Approx 2 hours for me)
  9. Please use caution if you are not using indirect heat, the bacon drippings will catch fire.
