Apple Fudge Cake Recipe
Apples and cinnamon are surprisingly good combination in this cake. This is a reduced fat cake but there isn't any skimping on the chocolate taste --- this cakew is very fudgy as it's name implies.

Ingredients
  • 2 eggs, beaten
  • 3/4 cup applesauce
  • 1 cup brown sugar, packed
  • 1 teasponn vanilla extract
  • 1 medium unpeeled, chopped apple
  • 11/4 cups flour
  • 1/3 cup cocoa
  • 11/2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Powdered sugar

Directions
  1. Preheat oven to 350 degree. Grease a small Bundt pan or regular loaf pan.
  2. In a large bowl, mix eggs,applesauce, brown sugar,vanilla and apple. In a seperate bowl, sift together flour, cocoa, cinnamon, baking powder and baking soda. Blend flour mixture into applesauce mixture just until all ingredients are moistened.
  3. Pour batter into prepared pan. Bake for 25 to 30 minutes or until a toothpick inserted into the center comes out clean. Cool for 10 minutes before inverting cake onto serving plate. Dust with powdered sugar ( or drizzle with a simple vanilla frosting or glaze) before serving.

I've eaten chocolate cinnamon cake, but never had it with the apples. Sounds really good! Plus, it's a smaller size cake, perfect for us.

Alterations


Used 1/2 cup each white and whole wheat flour, 1/2 cup cocoa powder and 1 tbsp cornstarch mixed in 1/4 cup water + 1 tsp lemon juice for the eggs. Delicious and rich!
