This is one of my favorite dishes at Johnny Carino's. I think it hits it just about on the money.

Ingredients
  • 2 tilapia fillets
  • 1/2 cup white flour
  • 2 ounces melted butter
  • 2 teaspoons chopped garlic
  • 1/2 cup diced jalapenos
  • 1 cup chopped spinach
  • 1 pinch salt
  • 1 pinch pepper
  • 1 pinch garlic salt
  • 4 ounces heavy cream
  • 1/2 cup lemon butter
  • 5 ounces angel hair pasta
  • 1 teaspoon fresh parsely
  • 1/2 cup diced roma tomatoes

Directions
  1. Dredge the tilapia filets on the flour, and add them to the melted butter and garlic to a meduim temperature saute pan.
  2. Once the tilapia has finished cooking on one side, flip them over and add the jalapenos, spinach, salt, pepper, and garlic salt.
  3. Prepare the angel hair pasta in boiling water and allow it to cook 3 -4 minutes
  4. Once the filets begin to flake, add the heavy cream, and bring it to a slight boil.
  5. Once the cream begins to boil, remove the pan from the fire and pour the lemon butter into the sauce.
  6. Put pasta in bowl and pour fish and sauce over the pasta.
  7. Garnish with fresh roma tomatoes and parsley.

Oh, I love this dish! I also love JC's other tilapia dish with the olives (though I don't think it's a regular on their menu). Even my 3 yo son likes to steal several bites from that dish!

This was wonderfully rich and satisfying. I started off searching for a healthy fish recipe and this was way too enticing to pass up. Cream ala Cream!!!!
