Tomato Basil Pasta Salad Recipe
My family's favorite summer salad! A trip to the garden, a clutch of fresh tomatoes and a big handful of basil sings summertime!

Ingredients
  • 1 pound pasta, your choice in shape - I like small shells, cooked in well salted water, drained
  • 4 cups tomatoes, diced into a size to match the size of cooked pasta, drained
  • 1/2 cup fresh basil, leaves only, sliced into a chiffonade
  • 1/2 small red onion, the half cut lengthwise in thirds, then sliced thinly
  • 1 small garlic clove, minced
  • 4 ounces feta cheese, crumbled
  • 2 tablespoons extra virgin olive oil, or more to taste
  • 2 tablespoons balsamic vinegar, or more to taste
  • 2 tablespoons Jane's Crazy Salt, or more to taste
  • freshly ground black pepper, to taste

Directions
  1. In large mixing bowl, toss pasta, tomatoes, basil, onion, garlic, and feta. Drizzle olive oil and vinegar over and season with Crazy Salt and pepper. Mix, taste, and adjust seasonings if necessary. Add more tomatoes or more basil if you think it needs it.
  2. NOTE: Use gluten-free pasta to make this gf.
