I just dug out this OLD cookbook from the Acadiana area of Lousiana. I have never tried, who knows might be good! They did open gator season this year in Texas for the first time in years..

Nice!! Never really liked gator cause it's too tough a meat, but I dont't think I tried it after it was marinated. I'll try this if I can find a gator in my back yard in Kansas.LOL

my family loves this...My son in law gave me the gator...he said the person that cooked it he really didn't care for it...UNTIL he ate mine...
He said it was really tender ...the other one that he had tried was tough...
but like I said this is different to do with gator can't wait to try it.
