How to make it

  • Heat broth in a large pot over medium - high heat.
  • Add garlic and mushrooms, cook 6 - 7 minutes, until mushrooms begin to brown.
  • Stir in thyme and rosemary, cook 30 seconds.
  • Pour in tomatoes, broth, tequila, lime juice and chipotle pepper.
  • Simmer uncovered for 30 minutes.
  • Just before serving, stir in parsley and seasonings.

    This sounds really good and it I love the shot of tequila and lime juice here with the chipotle pepper. And I adore mushrooms - yummm. Thanks for another great recipe, hon. :)
