Chocolate Cappuccino Candy

This is an easy recipe for a chocolate coffee type fudge.. it another type that should come out without crystallizing in hot or humid climates... I don't know how many servings but it makes 2 3/4 pounds of candy.
Ingredients
- 1 TBSP. instant coffee granules.... get a good coffee shopping list
- 1 TBSP. hot water shopping list
- 2 cups sugar shopping list
- 1 cup evaporated milk shopping list
- 1/2 cup butter shopping list
- 1 ( 12-ounce ) bag of semisweet chocolate morsels shopping list
- 1 ( 7-ounce ) jar marshmallow cream shopping list
- 1 cup chopped pecans shopping list
- 1 TBSP. finely grated orange rind shopping list
- 2 teasp. orange or orange extract shopping list
- 2 teasp. brandy extract shopping list
How to make it
- Combine the coffee granules and the water.
- stir until the granules are dissolved...... set aside
- combine the sugar, milk, and butter in a large saucepan
- cook over medium heat until mixture comes to a boil, stirring constantly
- boil 10 minutes.... stirring constantly.... remove from heat after the 10 minutes
- add chocolate morsels and the marshmallow cream... stirring until melted
- stir in coffee mixture, pecans, orange rind and the orange and brandy extracts ... mix well
- spread mixture evenly in a well buttered 13 x 9 x 2-inch pan
- cover and chill.
- cut into squares
- store in refrigerator
- yields : 2 3/4 pounds
