Cranberry Crumble Coffee Cake Recipe

Ingredients

1/4 cup finely chopped Almonds

1/2 cup softened Butter

1 cup Sugar

1 tsp Vanilla

2 Eggs

2 cups Flour

1 1/4 tsp Baking Powder

1/2 tsp. Baking Soda

1/4 tsp Salt

1 cup Sour Cream

1 cup Whole Berry Cranberry Sauce

TOPPING:

1/4 cup Flour

1/4 cup Sugar

1/4 cup Chopped Almonds

1/4 tsp Vanilla

2 tbsp. Cold Butter

Directions

Pre-heat oven 350*

Grease bottom of spring form pan. Sprinkle with first Almonds and set aside.

Cream butter, sugar, and vanilla. Beat 1-2 minutes on medium.

Add eggs one at a time beating well after each addition.

Combine dry ingredients flour, baking powder,baking soda and salt.

Add alternately with sour cream to creamed mixture starting with dry and ending with dry. Mixing well after each addition.

Spread 3 cups of batter over almonds in prepared pan.

Spoon cranberry sauce over batter spreading evenly to cover.

Top with remaining batter spreading to cover cranberry sauce.

For Topping:

Combine all dry ingredients.

Cut in butter until it resembles coarse crumbs. Sprinkle over top of batter.

Bake 70 - 75 minutes until toothpick inserted in center comes out clean.

Cool on rack 15 minutes in pan. Remove sides of pan serve warm either as is or with a dollop of whipped cream.
