I love this recipe from Taste of Home. It serves six as a side dish. If you don’t want to make the dressing, just use your favorite bottled raspberry dressing

Ingredients
  • 1/2 cup vegetable oil
  • 1/4 cup raspberry vinegar
  • 2 teaspoons Dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 (10 ounce) package fresh spinach, torn
  • 1 (4 ounce) package blue cheese, crumbled (can use feta)
  • 1 cup fresh blueberries
  • 1/2 cup chopped pecans, toasted

Directions
  1. In a jar with tight-fitting lid, combine the first five ingredients and shake well.
  2. In a large salad bowl, toss the spinach, blue cheese, blueberries and pecans.
  3. Add dressing and toss gently; serve immediately.
  4. Note: To toast pecans, preheat oven to 350°F. Lightly spray a baking sheet with cooking spray. Add pecans. Toast in oven until you can smell them, about 5 minutes. Watch carefully – they scorch easily

Oh Mrs P! Leave it to a fellow Minnesotan to come up with this delicious sounding salad - I love fruit with a tangy salad, but I've never tried blueberries. I just picked up a quart of plump juicy blues at Costco yesterday, so I believe I have our salad for tomorrow night - love the raspberry dressing, too, and have all to make it at home...this sounds perfect! Thanks, Mrs P - you've done it again for me...lit up my buttons!!
