How to make it

  • In a jar with tight-fitting lid, combine the first five ingredients and shake well.
  • In a large salad bowl, toss the spinach, blue cheese, blueberries and pecans.
  • Add dressing and toss gently; serve immediately.
  • Note: To toast pecans, preheat oven to 350°F. Lightly spray a baking sheet with cooking spray. Add pecans. Toast in oven until you can smell them, about 5 minutes. Watch carefully – they scorch easily

    Oh Mrs P! Leave it to a fellow Minnesotan to come up with this delicious sounding salad - I love fruit with a tangy salad, but I've never tried blueberries. I just picked up a quart of plump juicy blues at Costco yesterday, so I believe I have our salad for tomorrow night - love the raspberry dressing, too, and have all to make it at home...this sounds perfect! Thanks, Mrs P - you've done it again for me...lit up my buttons!!
