Ingredients

1 stick(4oz)unsalteed butter

11/2tsp cayenne

1tsp salt

11/2c bread crumbs

11/2c unsweetened shreaded coconut

11/2 lbs. skinless ,boneless chicken breast s,cut into 1" cubes

Directions

Preheat oven to 400. In a small bowl,combine the butter,cayenne pepper,and salt. In a shallow dish,combine the bread crumbs and coconut.

Brush the chiciken cubes with the butter mixture,then toss in the coconut mixture to coat. Place chicken on a rack set on a baking sheet and bake till crisp and golden,about 25 mins
