How to make it

  • Cook bacon until crispy, crumble and set aside.
  • In large skillet, saute onion, bell pepper, and garlic in butter until tender.
  • Stir in corn and lower heat to medium.
  • Cook for 4 to 5 minutes, stirring often to prevent sticking.
  • Stir in spices,cover, and cook for 4 to 5 minutes on low/med. heat.

    Made this recipe tonight along with debra47's lemon chicken. The skillet corn was great! I fried the bacon then used the bacon drippings to saute the onion and bell pepper. Good recipe and you get a 5 from me!

    Bingo! Been looking and looking thru several pages of corn recipes to find the one that strikes my fancy today! I cut corn off of 5 ears of leftover corn on the cob and wanted to make something other than corn pudding or corn salad. This looks really tasty, particularly the bacon ingredient! Thanks for posting!

    I love skillet corn. I sometimes make it when I have some left over corn on the cob. I cut off the corn and fry it with green pepper. I have never added the bacon. But I know that would be over the top.
