How to make it

  • Spread the tortillas with about 1/4 cup of Hummus.
  • Lay Roasted Red Peppers along the bottom 1/3 of the tortilla.
  • Roll up the tortilla as tightly as you can.
  • Wrap the tortilla in some plastic wrap and place in fridge for at least an hour and up to overnight.
  • Slice the roll on the diagonal into about 1 inch thick slices (2.5 cm)
  • Place on a serving plate and garnish with olives if desired.

    These look wonderful Liz! I think I'm going to make them to take to my Aunt's next weekend! She's having a memorial for my uncle who passed away in January -- all finger food. Told me not to bring anything, but I can't go empty-handed! These would be perfect!
