Rasta Pasta

- 4 ounces linguini shopping list
- 1/4 cup butter shopping list
- 1 onion; diced shopping list
- 2 cloves garlic; minced shopping list
- 2 Tbsps. fresh ginger-root; minced shopping list
- 1 scotch bonnet pepper; seeded & minced ( substitute 1 jalapeno pepper if scotch bonnets not available) shopping list
- 2 cups calabaza squash; cubed shopping list
- 1 cup water or chicken stock (may use vegetable stock, also) shopping list
- 1 cup coconut milk ( not coconut cream) shopping list
- 1 teasp. ground coriander shopping list
- 1 teasp. ground cumin shopping list
- 1 Tbsp. fresh thyme leaves, or 1/4 teasp. dried shopping list
- 1/2 teaspoon white pepper shopping list
- 1/2 teasp. ground nutmeg shopping list
- 1/2 teasp. ground allspice shopping list
- 1/2 teasp. salt shopping list
- 1 bell pepper; chopped shopping list
- 4 mushrooms; chopped shopping list
- 1/2 a small zucchini; chopped shopping list
- 1/4 cup corn kernels shopping list
- 4 to 6 broccoli florets; quartered shopping list
How to make it
- Place pasta in boiling water & cook until just tender. Drain pasta & chill under running cold water. Set aside. To make sauce: Melt 2 Tbsps. of the butter over med./low heat in a sauce pot & add the onion,garlic, ginger & scotch bonnet pepper. Saute 4 to 5 minutes. Add the calabaza squash & the water or broth to the pan & cook for 15 to 20 minutes; or until squash is tender. Add coconut milk, coriander, cumin,thyme,white pepper, nutmeg, allspice & salt. Simmer for another 5 minutes. Place this mixture in a blender & blend until smooth. In a large skillet melt remaining butter & add bell pepper, mushrooms & zucchini. Saute 4 to 5 minutes. Add corn & broccoli & saute 2 more minutes. Pour sauce from blender into skillet & stir.Bring mixture to a simmer & cook 1 minute more. Blend the pasta thoroughly into mixture in skillet. Cook 1 or 2 minutes more, until the pasta is steaming. Serve with warm bread.
