How to make it

  • Place pasta in boiling water & cook until just tender. Drain pasta & chill under running cold water. Set aside. To make sauce: Melt 2 Tbsps. of the butter over med./low heat in a sauce pot & add the onion,garlic, ginger & scotch bonnet pepper. Saute 4 to 5 minutes. Add the calabaza squash & the water or broth to the pan & cook for 15 to 20 minutes; or until squash is tender. Add coconut milk, coriander, cumin,thyme,white pepper, nutmeg, allspice & salt. Simmer for another 5 minutes. Place this mixture in a blender & blend until smooth. In a large skillet melt remaining butter & add bell pepper, mushrooms & zucchini. Saute 4 to 5 minutes. Add corn & broccoli & saute 2 more minutes. Pour sauce from blender into skillet & stir.Bring mixture to a simmer & cook 1 minute more. Blend the pasta thoroughly into mixture in skillet. Cook 1 or 2 minutes more, until the pasta is steaming. Serve with warm bread.

    Right you are, deedeec. Butternut squash can be substituted for calabaza if it can't be obtained.

    I also read that butternut squash is very similar to Calabaza.
