Country Pork Chops With Sage Smashed Potatoes Recipe
These are awesome. I make these often because we are huge fans of pork chops and potatoes. This is an awesome recipe. Enjoy

Ingredients
  • 4 medium potatoes cut into 1" chunks
  • 1 tablespoon olive oil
  • 1 large garlic clove pressed
  • 4 pork chops
  • 1-1/2 tablespoons butter
  • 1/2 cup milk
  • 1 teaspoon dried sage
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. In 2-quart saucepan over medium heat cook potatoes covered in 2 inches of boiling water until tender.
  2. While potatoes cook mix olive oil with garlic and rub on both sides of chops.
  3. Coat a large nonstick skillet with vegetable cooking spray and heat to medium.
  4. Fry chops until lightly browned on both sides.
  5. Season with salt and pepper.
  6. Drain potatoes and mash potatoes with fork leaving them lumpy.
  7. Mix in butter then milk and sage.
  8. Mix over low heat for 2 minutes.
  9. Season with salt and pepper.
  10. Serve chops with potatoes.
