Raspberry Soup

- About 4 cups raspberries, divided shopping list
- 1/2 cup white sugar(eliminate if using frozen, sweetened berries) shopping list
- juice from 2 oranges(or to get about 1/2 cup) shopping list
- juice from lemons shopping list
- 1T cornstarch shopping list
- 1 cup vanilla yogurt shopping list
- 1 cup sparkling water shopping list
How to make it
- Toss raspberries in sugar to coat.
- In blender, puree 1/2 of the raspberries and strain to remove seeds.
- In saucepan combine pureed berries, orange and lemon juice and cornstarch. Cook on medium heat until it becomes clearish and thickens slightly, stirring often.
- Chill about 2 hours.
- Just before serving, add soda and remaining raspberries and stir, and add a dollop of yogurt to each bowl.
