Tortillas For Enchiladas Recipe
More of a cornmeal crepe. Makes a lighter wrap for enchiladas.Can be used for other recipes that call for corn tortillas.

Ingredients
  • 1 Cup AP flour
  • 1/2 cup corn meal
  • 1/2 tsp. salt
  • 1 egg
  • 2 Tbsp. vegatable oil
  • 1 1/2 cups water or milk

Directions
  1. Sift together dry ingredients
  2. Add egg, oil, and liquid.
  3. Stir with wisk until well blended.
  4. Lightly oil 8 inch non-sick skillet. (I use a paper towel with a dab of oil on it)
  5. Heat pan on medium-high (as for pancakes)
  6. Quickly pour 3 tablespoons batter in hot pan and rotate pan to almost coat bottom evenly. ( If batter is too thick , add 1 or 2 Tbsp. water)
  7. Cook until top appears dry and turn to cook other side about 2 minutes.
  8. Stack with small sheets of wax paper in between each tortilla.
  9. May be frozen in a plastic bag for later use.
