Mango Drunken Fool Parfait

Grown up dessert! I serve them in oversized white wine glasses. from Relish Magazine
Ingredients
- 1 1/2 c pureed fresh mango (about 1/1/2-2 large mangoes) shopping list
- 2/3 c confectioner's sugar shopping list
- 3 tbs fresh lime juice shopping list
- 3 tbs rum (I like Gosling's) shopping list
- 1 1/2 c heavy cream, whipped shopping list
- 3 c chopped mango (4-5 mangoes) shopping list
- 1 c heavy cream, whipped for garnish shopping list
How to make it
- Combine mango puree, sugar, lime juice and rum.
- Fold in whipped cream.
- Place 1/4 c chopped mango in each of the 6 parfait glasses.
- Top with 3/4 c of the mango cream mixture followed by a 1/4 c chopped mango.
- Top off with remaining mango cream and garnish with additional whipped cream if you like .
