Ingredients
  • 1 1/2 c pureed fresh mango (about 1/1/2-2 large mangoes)
  • 2/3 c confectioner's sugar
  • 3 tbs fresh lime juice
  • 3 tbs rum (I like Gosling's)
  • 1 1/2 c heavy cream, whipped
  • 3 c chopped mango (4-5 mangoes)
  • 1 c heavy cream, whipped for garnish

Directions
  1. Combine mango puree, sugar, lime juice and rum.
  2. Fold in whipped cream.
  3. Place 1/4 c chopped mango in each of the 6 parfait glasses.
  4. Top with 3/4 c of the mango cream mixture followed by a 1/4 c chopped mango.
  5. Top off with remaining mango cream and garnish with additional whipped cream if you like .
