How to make it

  • Combine flour and sugar in large bowl.
  • Cut in butter til mixture is crumbly. Set aside 1/2 cup of the crumbs
  • Add baking powder and soda to remaining flour mixture.
  • Combine evaporated milk and lemon juice. Stir well and leave 5 min until thickened. To this add egg and extract and beat well.
  • Add to dry ingredients and stir until just moistened.
  • Spread 2/3 of batter over bottom and about 1 inch up the side of a 9" greased springform pan to form a shell.
  • Spread pie filling in shell.
  • Drop small spoonfuls of remaining batter over pie filling.
  • Stir almonds into reserved crumb mixture and sprinkle evenly over cake.
  • Bake at 350F/180C for 50 - 55 minutes.
  • *May sub 2 1/4 cps Robin Hood all purpose Wheat and Oat Flour OR 2 1/2 cups cake and pastry flour.
  • **My sub with different pie fillings i.e. blueberry (omit almond extract, add lemon zest) or apple ( add some cinnamon) peach, etc
  • Use your imagination for different flavor combinations. Use different nuts too. Apple goes so well with pecan also. Have fun. Be creative. I seldom follow a recipe exactly.
