Ingredients
  • 8 fillets of sole
  • 5 TBS butter
  • 2 TBS chopped shallots
  • salt and pepper to taste
  • 2 TBS chopped dill
  • 1/2 cup dry white wine
  • 1/2 LB cleaned raw shrimp cut into 1 in pieces
  • 1 1/2 cup heavy cream
  • 1 tsp cayenne
  • 1 tsp lemon juice

Directions
  1. preheat oven to 400. Take a baking dish lg enough to lay the fish in it with one layer. Grease the dish with 1 TBS butter.Lay the fish in it, sprinkle with salt and pepper, scatter shallots over the fish dot with remaining butter, sprinkle dill over, pour wine over then place on top of stove and bring to a boil. Place dish immediately in the oven. bake 5 minutes. Drain the liquid from the dish into a medium skillet. Add the shrimp and a dash of tobasco, simmer 1 minute. Remove shrimp with slotted spoon and scatter over the fish that are still in the dish. Reduce the cooking liquid for 2 minutes add the cream, cayenne and reduce it on high heat for about 10 minutes or until thick. Add the lemon juice to the sauce and pour over fish.
