Ploughmans Pickle

- 1 large brown onion, finely diced shopping list
- 4 granny smith apples, peeled and chopped shopping list
- 1c saltanas shopping list
- 1 400g can chopped tomatoes shopping list
- 2 cloves garlic shopping list
- 4 whole cloves shopping list
- 1T mustard seeds shopping list
- 11/2c brown sugar shopping list
- 2c malt vinegar shopping list
- 1/2tsp salt shopping list
How to make it
- Place the onion, apple, sultanas, tomatoes, garlic, cloves, mustard seeds, sugar, vinegar and salt in a large saucepan over med. heat and stir until the sugar is dissolved.
- Bring to a boil and cook for 40-45 mins. or until thickened. Carefully spoon the hot pickle into sterilised jars.
- Let the jars sit for a couple of weeks to allow the flavours to infuse and intensify.
