Ploughmans Pickle Recipe
Serve this tasty chutney with thickly sliced wholemeal bread, sliced ham and a nice aged cheddar. Recipe makes 4 cups

Ingredients
  • 1 large brown onion, finely diced
  • 4 granny smith apples, peeled and chopped
  • 1c saltanas
  • 1 400g can chopped tomatoes
  • 2 cloves garlic
  • 4 whole cloves
  • 1T mustard seeds
  • 11/2c brown sugar
  • 2c malt vinegar
  • 1/2tsp salt

Directions
  1. Place the onion, apple, sultanas, tomatoes, garlic, cloves, mustard seeds, sugar, vinegar and salt in a large saucepan over med. heat and stir until the sugar is dissolved.
  2. Bring to a boil and cook for 40-45 mins. or until thickened. Carefully spoon the hot pickle into sterilised jars.
  3. Let the jars sit for a couple of weeks to allow the flavours to infuse and intensify.
