How to make it

  • Prepare chicken
  • In a medium bowl.whisk together lime juice, oil, black pepper and salt
  • Add chicken to bowl and toss well to coat with marinade; set aside
  • Preheat grill to medium
  • Prepare salsa
  • Put 2/3 C of blueberries in a medium mixing bowl and mash with a fork
  • Add jalapeno, shallot,salt, cilantro, mint, basil and lime juice and mix well
  • Remove cutlets from marinade and place on grill; discard marinade
  • Cook until well marked, about 4 - 5 minutes each side, depending on thickness of chicken
  • Divide chicken among four plates; top with salsa and serve immediately

    I made this for our family this evening and it was surely a success. When I make it again I will just season the chicken slightly before cooking it, I found the marinade nice but a tad bland and a bit more salt and pepper directly onto the poultry will cure that.
    The salsa was a great success. I made it in a mini food processor with just a few zips in the work bowl. It is pretty, fragrant, and tasty. Together the dish looks pretty. I am going to do it with salmon next because the juxtaposition of colors will be great.

    Recipe caught my eye as my husband and I have just picked about 6 pounds of bilberries. Never had the combination of bilberries/blueberries with chicken but it definitely sounds interesting. Will let you know if and when we try it. Thanks for the post!

    John and I both love fruity mixes on meat dishes - this one is just perferct for us to try, and I picked up 3 quarts of fantastic MI blueberries this weekend. This dish will hopefully go on the table this week - will send you a picture...thanks, Pat - keep those blueberry recipes coming!
