OVERNIGHT APPLE FRENCH TOAST

- 1/4 cup (4 Tablespoons) butter shopping list
- 1/2 teaspoon ground cinnamon shopping list
- 1/4 cup packed brown sugar shopping list
- 1 Tablespoon maple syrup shopping list
- 2 small apples, peeled and cut into 1/4 inch slices shopping list
- 6 slices French bread, cut about an inch thick (see note) shopping list
- 2 eggs shopping list
- 1/2 cup milk shopping list
- 1/2 teaspoon vanilla shopping list
- Additional ground cinnamon (optional) shopping list
How to make it
- Melt butter in a small saucepan. Stir in cinnamon, brown sugar, and maple syrup. Pour mixture into a well greased 8-inch square baking pan. Be sure mixture evenly coats the bottom of the pan.
- Arrange apple slices over the syrup mixture, overlapping slices slighty. I get three rows of apples by alternating the direction of each row to get in as many slices as possible. If you have a few left over, eat them - chef's perks!
- Arrange bread slices over apples.
- Whisk together eggs, milk, and vanilla in a large measuring cup with a spout (for easier pouring). Pour egg mixture evenly over bread slices. Cover pan tightly with foil and refrigerate overnight (or all day if you're having it for dinner like we do). Remove pan from refrigerator 30 minutes before baking. Heat oven to 350 degrees. Remove foil and LIGHTLY sprinkle bread slices with additional cinnamon, if desired. Bake, uncovered, 40 minutes or until the apples are cooked and the French toast is done. Cut into servings (easy to do using one slice of bread per serving) and invert onto plates so the apples are on top and make a prettier presentation. This is sweet enough on its own that you will not need butter and syrup as you do for traditional French toast.
- Note: The number of bread slices you need will depend on the size of the French bread you buy. The bread from my local grocery store bakery is about 2 inches high and 4 inches wide, so 6 slices fit nicely in my 8-inch square baking pan.
