Hi Ho Cracker Pie Recipe
My aunt in Texas first made this pie for me when I was a young teen (eons ago!) & I fell in love with it. Don't be turned off by the crackers; this is a truly delicious pie! Added plus....it makes it's own crust!

Ingredients
  • 20 buttery, round crackers ( like Hi-Ho's or Ritz); finely crushed
  • 1/2 cup chopped pecans
  • 1 teasp. baking powder
  • 3 egg whites
  • 1 cup sugar
  • 1 teasp. vanilla extract
  • 1 cup whipping cream
  • 1/4 cup chopped pecans

Directions
  1. Preheat oven to 350 degrees F. Combine cracker crumbs, 1/2 cup chopped pecans & baking powder in a large bowl; set aside.Beat egg-whites until frothy, gradually adding sugar until stiff & glossy. Add vanilla & beat until blended. Fold meringue into cracker-crumb mixture.. Spoon mixture into a well-greased 9-inch pie pan. Bake at 350 degrees F for 25 to 30 minutes.
  2. Cool, then refrigerate for at least 2 hours before serving. Serve topped with whipped cream & sprinkled with a few chopped pecans.
