Cheese Stuffed Sole Recipe
CHEESE STUFFED SOLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Tillman Estate in Forney, Texas in 1982.

Ingredients
  • 1/3 cup butter
  • 1-1/2 teaspoons garlic powder
  • 1-1/2 teaspoons basil leaves
  • 2 tablespoons chopped green onions
  • 6 fresh sole filets cut in half
  • 1 large ripe tomato sliced
  • 12 slices pepper jack cheese
  • 2 tablespoons grated parmesan cheese

Directions
  1. Preheat oven to 350 then melt butter in rectangular baking dish.
  2. Stir in garlic, basil and green onions.
  3. Dip both sides of filet halves into seasoned butter.
  4. Set half the filets aside and place the other half in pan.
  5. Layer 2 slices of cheese and a sliced tomato.
  6. Cover with remaining filet half and sprinkle with parmesan cheese.
  7. Bake 35 minutes.
