Baked Orange Roughy With Cheese And Mushrooms Recipe
BAKED ORANGE ROUGHY WITH CHEESE AND MUSHROOMS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Massey Estate in Malakoff, Texas in 1992.

Ingredients
  • 1 tablespoon butter
  • 4 large scallions sliced
  • 1 pound mushrooms sliced
  • 1-1/2 pounds orange roughy filets
  • 1/4 cup dry white wine
  • 2 tablespoons lemon juice
  • 1/2 teaspoon dried marjoram
  • 1 teaspoon freshly ground black pepper
  • 4 slices Swiss cheese cut into 1/2" strips
  • 2 tablespoon unseasoned bread crumbs

Directions
  1. Preheat oven to 400 then grease a shallow baking dish with butter.
  2. Evenly scatter the scallions and mushrooms over bottom of dish.
  3. Place filets on top in a single layer.
  4. Mix wine and lemon juice together and pour over fish.
  5. Sprinkle with marjoram and black pepper then evenly distribute cheese strips over top.
  6. Crumple a large piece of waxed paper and wet it.
  7. Shake off excess water and place loosely over fish and bake 7 minutes.
  8. Remove fish from oven and take off waxed paper.
  9. Sprinkle fish with bread crumbs then bake 9 minutes.
  10. Remove fish from oven and heat broiler and broil just long enough to brown top of filets.
