I have eaten this cobbler at Salt Lick Restaurant in Austin, Texas. They are famous for their barbeque, and this cobbler is served there. It is a delicious, easy quick cobbler to make! Enjoy.

Ingredients
  • 1/2 cup butter, melted
  • 1 cup flour
  • 1 cup white sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2/3 cup milk, room temperature
  • 1 egg at room temperature
  • FILLING
  • 1-28 ounce can sliced peaches, drained
  • 1 cup white sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Directions
  1. In a 9 X 13 pan, melt butter
  2. In a large bowl, whisk together flour, sugar, baking powder, salt
  3. Stir in milk and egg, mix to combine
  4. Pour evenly over melted butter
  5. In another bowl, combine peaches, sugar and spices
  6. Spread this over batter
  7. DO NOT STIR
  8. Bake at 350 degrees for about 35-45 minutes OR
  9. Until batter comes to the top and is golden brown
  10. Serve warm with a scoop of vanilla ice cream
