Ingredients
  • 1 medium West Indian pumpkin
  • 1 egg
  • cinnamon (to taste)
  • vanilla (to taste)
  • salt and sugar (to taste)
  • 1ΒΌ cup of flour ( you can use Presto)
  • Oil for frying

Directions
  1. Cut the pumpkin in cubes and boil until cooked and mash.
  2. Add the rest of the ingredients.
  3. Drop into hot oil by tablespoons.
  4. Cook on both sides until done and golden.
  5. Note: Oil should be hot but not at high temperature, Not to burn the tortitas when put to frying.

Wow! This sounds soooo good! When you cook the pumpkin, do you cook it whole in the oven, or do you scoop it out and cook it on the stove top? I would like to make it :)

Hi, Clareondrey! I live in Puerto Rico, but maybe you can go a latin grocery in your area.
and buy some "Calabaza" = West Indian pumpkin
