Pineapple Squares Recipe

How to make it

  • Mix the base ingredients and press into an 8in square pan.
  • Bake at 350 until golden brown.
  • Remove from the oven and allow to cool completely before putting the filling on.
  • Mix the filling ingredients and using a mixer, beat until stilff. Spread onto the cooled base.
  • Finally add the crushed pineapple, making sure to drain all the juice. (I use my hands to squeeze out the access... the drier the better)
  • Cool in fridge.
