Low-fat Arroz Con Pollo Recipe
I haven't posted in a while and thought this might be something people might like. This is a nice adaptation of a good latin american dish. You can't use too much garlic in my mind. It's great served with black (or pinto) beans

Ingredients
  • 2 1/2 - 3 pounds lean boneless, skinless chicken breasts, fat removed
  • 1 c. chopped red onions
  • 2 tbsp. minced garlic
  • 2 tsp. cumin
  • 1 c. long grain white rice
  • 2 cups low-fat or 98% fat free chicken broth
  • 1 chopped green bell pepper
  • 1/2 tsp. salt
  • 1/2 tsp. ground pepper
  • 2 cups frozen peas
  • 1 large fresh tomato, diced
  • 1/3 c. chopped fresh cilantro
  • Lime wedges for garnish

Directions
  1. Spray very large nonstick skillet or nonstick Dutch oven or a large wok over medium high heat.
  2. Rinse chicken and pat dry.
  3. Add half the chicken to skillet and brown well, 5 minutes per side.
  4. Repeat with remaining chicken.
  5. Remove from skillet.
  6. Add onions and bell peppers to skillet and cook, stirring until browned (add a little broth, wine or water if needed).
  7. Add garlic, cumin and rice.
  8. Cook for 1 minute, stirring constantly.
  9. Stir in broth and water, salt and pepper.
  10. Bring to a boil and reduce heat.
  11. Return chicken to skillet, placing on top of rice.
  12. Cover and simmer over medium heat until rice is tender, 20 minutes.
  13. Stir in peas and tomatoes.
  14. Cover and simmer 5 minutes more.
  15. Stir in chopped cilantro.
  16. Serve with lime wedges.
