Ingredients
  • 1 teaspoon Paprika
  • 1 teaspoon Chili Powder
  • 1/2 teaspoon Salt
  • 1/8 teaspoon Ground Red Pepper
  • 1/8 teaspoon Ground Coriander
  • 2 Cups Sugar
  • 3/4 Cup Light Corn Syrup
  • 1/4 Cup Water
  • 1 Package (12 oz) Raw Spanish Peanuts
  • 1/4 Cup Butter
  • 1-1/2 teaspoons Baking Soda

Directions
  1. In a small bowl,combine paprika,chili powder,salt,red pepper,and coriander;set aside.
  2. Butter sides of a heavy large saucepan.
  3. Combine sugar,corn syrup,and water in saucepan.
  4. Stirring constantly,cook over medium-low heat until sugar dissolves.
  5. Using a pastry brush dipped in hot water, wash down any sugar crystals on sides of pan.
  6. Attach a candy thermometer to pan,making sure it does not touch the bottom of the pan.
  7. Increase heat to meduim and bring to a boil.
  8. Cook( without )stirring, about 10 minutes or until mixture reaches 260 degrees.
  9. Stir in peanuts and continue cooking until mixture reaches hard-crack stage,about 300 to 310 degrees.
  10. Remove from heat.
  11. Add butter and spice mixture,stir until butter melts.
  12. Add baking soda (syrup will foam),stir until soda dissolves.
  13. Pour candy onto a large piece of buttered aluminum foil,cool completely.
  14. Break into pieces.
  15. Store in an airtight container.
  16. Makes about 2 pounds of candy
