Slumgulium Recipe
Nothing fancy, just an old family stand-by. I don't even know why we call it Slumgulium.

Ingredients
  • brown rice - 2 C
  • ground beef - 1 lb. or more
  • 1 onion
  • 1 bell pepper
  • tomato sauce of some sort - plenty - maybe 11/2 jars or big cans
  • cheeses of some sort:
  • like cream cheese or cottage cheese or feta to mix in the sauce, along with a gtated cheese like sharp cheddar or havarti to melt on top.
  • optional additions like maybe capers or sauteed mushrooms or olives or frozen corn or eggplant or artichoke hearts or what - have - you.

Directions
  1. Set the rice to cooking as usual.
  2. in big skillet cook ground beef with the pepper and onion.
  3. drain off the fat
  4. add tomato sauce
  5. Mix in a cheese to stretch the recipe
  6. add any optionals
  7. Mix with the rice
  8. Top with shredded cheese and cover over low heat to melt.
  9. serve with salad, please.

You are the only other person I have ever heard who knew what "slumgullium" was. My mother always made it & although she called it "slumgullion", it's the same thing! Thanks for the memory & the laugh!


My dictionary says slumgullion is a cheap or insubstantial stew....not sure if that's a good thing or not! Somewhere I have a recipe for oyster slumgullion from a restaurant on the Oregon coast. It sounded anything BUT insubstantial if I remember correctly.


Mmm... we just read about Pa bringing a tin of oysters home for Christmas in Little House (On the Banks of Plum Creek) - it was quite an adventure! And I have been wanting good fresh oysters all day... though last time I ate mussels I ended up in the emergency room so I feel a little uneasy about any shellfish now...


Great leftover recipe and indeed different than my meat and potato version of slumgullion


My mom said my dad's mother made nothing but slumgullion ...she said it like it was a negative thing lol . YOURS sounds good . =)


Ha! my hus asked what he could make for dinner tonight - as I am on strike until he fixes the problem of my fruits and veggies sloshing around in swamp muck that keeps flooding the floor of the frige - and I said slumgullium would be fine and he acted like he was making it, but really I did. and then he kept calling it "your mother's spaghetti" all evening. And it is SOOO easy to make nothing but slumgulli(on)um - it's a good rut meal. ;)
