Grilled Lamb on Rosemary Skewers

- 2lbs. boneless lamb shoulder,cut in chunks shopping list
- 10-20 fresh figs shopping list
- rosemary branches shopping list
- 1/4c extra virgin olive oil shopping list
- salt and pepper shopping list
- 1/2c fresh squeezed lemon juice shopping list
- 2 cloves garlic,roughly chopped shopping list
- 1Tbs minced fresh rosemary shopping list
How to make it
- Start charcoal fire or heat gas grill;fire should be moderately hot. Thread lamb and figs 0n rosemary branches; 3 or 4 chunks or figs per skewer. Do not mix meat and figs on same skewer.
- Brush lightly with olive oil and season with salt and pepper. Mix together the lemon juice,garlic and minced rosemary and brush a little of this mixture on lamb and figs.
- Grill,turning skewers as each side browns and taking care to avoid gflare-ups. Total cooking time should be from 6-10 mins. for med-rare meat,and 4-5 mins for the figs. Meat will become slightly more done after you remove it from the grill,so take this into account.
