Easily adaptable basic hummus for an appy or snack you can serve with vegetables, crackers, thick or thin greek pitas brushed with olive oil and toasted....YUMMM

Ingredients
  • 1 19 oz Can chickpeas (drained, reserve liquid)
  • 1/4 Cup reserved chickpea liquid (or more depending on consistency desired)
  • 4 Tbsp Lemon juice
  • 2 Tbsp Tahini (sesame paste)
  • 2 - 4 Cloves crushed garlic (or more to taste)
  • 1/2 Tsp salt
  • 1/8 Tsp Paprika
  • Sprinkle of cumin (or to taste)
  • 3 Tbsp Extra virgin olive oil

Directions
  1. In food processor add;
  2. chickpeas, reserved liquid from chickpeas, lemon juice, tahini, garlic, salt, paprika, and cumin if desired.
  3. Process until all combined and well blended
  4. Continue processing and add Extra virgin olive oil slowly
  5. Continue blending until desired consistency. Add additional liquid if a runnier consistency is desire.
  6. Shorter time for coarse texture and longer for smoother texture.
  7. Make ahead and let flavours meld together for several hours prior to serving.
  8. Garnish with a sprig of fresh parsley and a sprinkle of paprika on top.
  9. Can be stored in refrigerator for up to 3 days.
  10. Enjoy!!

Hi lobster! We love hummus in this house but I've never made homemade before. I'm going to give this one a try. I saw one in my grocery store recently that was lemon flavored. Think a little lemon juice could be added to this? Maybe in place of the chickpea juice?


We love homemade hummus!! My husband makes sandwiches with it-I make mine with fresh ground cumin and coriander for a little extra punch. My little guys like it too.


Lobster! This is fantastic. Made it today and changed it slightly (our stores only carry 15.5 oz. cans) so I only added lemon juice in place of the chickpea juice (I was really hankering for a lemony flavored hummus) and just upped the paprika and cumin a little. Next time, I will make it as written with the chickpea juice and a little lemon juice. We'll be having this with supper tonight. This is a keeper. Thanks for sharing!
