BUCKWHEAT AND YOGURT PANCAKES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hawk Estate in Richardson, Texas in 1994.

Ingredients
  • 2 cups buckwheat flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1-1/2 cups buttermilk
  • 1/2 cup plain yogurt
  • 2 eggs
  • 1 teaspoon maple flavoring
  • 1 tablespoon canola oil
  • Nonstick cooking spray

Directions
  1. Combine flour, salt and baking soda then add remaining ingredients.
  2. Pour by 1/8 cup onto hot lightly sprayed griddle and cook until brown turning once.
