Cherry Tomato And Red Onion Salad Recipe

Ingredients

1 medium red onion, sliced 1/4-inch thick

1/2 cup apple cider vinegar

1/4 cup sugar

salt and pepper

8 cups tomatoes,( about 3 pounds ) cut any large tomatoes

ice water

Directions

in a medium bowl combine 4 cups ice cold water and 2 teasp. salt

stir until the salt dissolves

add onion slices and stir gently to separate the rings

let stand 20 minutes. then drain********

meanwhile for the sweet and sour dressing

in a small bowl whisk together vinegar and sugar, 3/4 teasp. salt, and freshly ground black pepper

in extra large bowl combine the tomatoes and drained onions

add dressing and gently toss

let stand 5 minutes

the reason for soaking the onion is to make them less harsh and more sociable.. it also firms the texture and makes the onion crisp.
