Tofu Eggplant Grape Tomato Roast

- I medium purple eggplant peeled and sliced in 1/2 inch round slices shopping list
- 1/2 package or 8 grape or cherry tomatoes washed and cut in half lengthwise shopping list
- 1 package of organic firm tofu sliced in 1/2 inch slices shopping list
- garlic-infused white truffle oil or shopping list
- herb- infused EVOO shopping list
- panko bread crumbs shopping list
How to make it
- Put eggplant on a platter with plate on top and a weight
- (This was my mother's way of getting water and bitterness out
- I still have my grandmother's old heavy iron that Mom gave me)
- when eggplant has been standing from 1/2 -1 hour drain and proceed with recipe
- Preheat oven to 300 degrees F
- Fix two bowls-one with oil and 1 with panko
- I use a round pizza pan with Reynolds Release foil
- Dip eggplant and tofu in oil and then panko
- Place on pan with tomato pieces
- Sprinkle with oregano and a bit more oil
- Roast 10-15 minutes according to your oven
- Turn eggplant and tofu half way through or when toasty on the bottom
- Pierce with fork to test doneness
- That's It ! Enjoy with fresh baked bread.
